The Classic Ikon 7″ Hollow Edge Nakiri Knife by Wusthof is a versatile vegetable cleaver well suited for slicing, dicing, and chopping vegetables of all sizes and densities. It is also well suited for use on fruits. The unique wide and thin blade shape originates from Japan and produces very fine, even cuts. The hollow edge offers the added benefit of preventing thin slices from sticking to the blade.

Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
